40g fresh garlic, minced
70g red wine vinegar
80g cilantro, finely hand chopped
250g olive oil
2 tsp salt
1 1/2 tsp oregano
1 1/2 tsp gochugaru or chili flakes
1 1/2 tsp fish sauce
1 tsp black pepper
Add garlic and vinegar to a vessel to hang out for 10m.
Combine remaining ingredients and allow flavors to grow more powerful with time.
