2 lb chicken thighs
2 tsp sea salt
4 slices raw bacon, cut into 1/2-inch pieces
2 tsp smoked paprika
1 Tbsp allulose
No sugar added BBQ sauce*
• Cube chicken. Mix with salt in bowl. Cover and brine in fridge for 1hr.
• Add bacon, paprika, and allulose to food processor. Blend into paste.
• Pat the chicken pieces dry with paper towels.
• Spread bacon paste on chickenz.
• Skewer.
• Set smoker to 400. Turn on 4 sides every 5min for 20-25m basting with BBQ sauce.
*If I’m not making my own BBQ sauce, Sweet Baby Ray’s has a no sugar added bottled sauce made with allulose. It also has sucralose, which is not ideal, so be warned that it’s not a perfectly healthy option, but still better than sugar and corn syrup.
